My hubby loves them - made with brown vinegar as they used to be made! I boil the vinegar before pouring it over the boiled peeled eggs.

just normal brown vinegar?
I tried some today so will let you know in 10 days or so when i taste them.
Does anyone know why you are supposed to boil the vinegar?

Not unless its when you boil with the spices to make it spiced.
Do you let it go cold or pour over the eggs hot.

To be honest it is my first go today and i used sarsons ready spiced so i used from cold - fingers crossed!

I use that for pickled onions so will give it a go with the pickled eggs. Are you useing big or little eggs?

For pickling we've been using a recipe from Pru Leith! It's rather nice, providing you can find allspice berries, rather than ground allspice.

Damn, i have the techniques bible! A quick check reveals no pickling recipes. Hmm, i sense a shopping trip coming on....

Pru Leith's Pickling Vinegar
1.1 litres / 2pts malt vinegar
8g 1/4oz blades of mace
8g cinnamon stick
8g allspice berries (my note, Waitrose sell them...)
8g black peppercorns
8g mustard seeds
4 whole cloves
15g sliced root ginger
Put everything into a large saucepan and heat gently, covered tightly, until on the point of simmering. Remove from the heat.
Leave for 3 hours then strain through muslin or a jelly bag.
The vinegar is now ready for use.

Finding this conversation as I am considering pickling eggs, I have located an online store that sells Allspice Berries
and now OH is interested cos it has all the Asian ingredients on this site too
